Making of Yam Flour (with Practical)

- Yam tubers
- Grater or food processor
- Large bowl
- Fine mesh sieve
- Clean cloth or cheesecloth
- Oven or dehydrator
- Blender or food processor (optional)
- Choose yam tubers that are firm and have no soft spots or blemishes. Peel the yam with a sharp knife or vegetable peeler, and cut it into small pieces.
- Grate the yam pieces using a grater or a food processor fitted with a grating blade. If using a food processor, pulse the yam until it is finely grated, but be careful not to overprocess it.
- Transfer the grated yam to a large bowl and mix it with water to form a thick paste. Use about 1/2 cup of water for every 2 cups of grated yam.
- Pour the yam paste onto a fine mesh sieve placed over a clean bowl. Use a spoon or spatula to press the paste against the sieve and squeeze out as much liquid as possible.

- Ripe plantains (the number will depend on how much flour you want to make)

- Choose ripe plantains: The plantains should be fully ripe, with blackened skins. This will make them easier to peel and blend, and will also give the flour a sweeter taste.
- Peel the plantains: Cut off the ends of the plantains and make a slit lengthwise down the skin. Use your fingers to peel off the skin.
- Cut the plantains into small pieces: Cut the peeled plantains into small pieces, about 1 inch in length.
- Blend the plantains: Place the plantain pieces in a blender or food processor and blend until they are smooth. You may need to add a little bit of water to help the blending process.
- Spread the plantain puree onto baking sheets: Use a spoon or spatula to spread the plantain puree onto baking sheets lined with parchment paper. Spread the puree evenly and thinly, so that it dries faster.

Leave the door slightly ajar to allow moisture to escape. Check the puree every 30 minutes, flipping the baking sheets if necessary, until the puree is completely dry and brittle.
